We make our own sweet bean paste by adding Hokkaido adzuki beans to the locally sourced adzuki beans from the highest region. It is a mildly sweet 'chunky bean paste' that allows you to enjoy the flavor of adzuki beans. Everyone loves anko. It is still the most popular item at Fuka.
We use wild walnuts and river walnuts that grow in the mountains and riverbanks of the highest region. The shells are cracked in the workshop, and the walnuts are extracted and ground in a mortar on the day of production. The smooth and fluffy gentle flavor and sweetness are well received.
This is a white bean paste rice cake made with 'Tanabata White Sasagi', a type of Sasage (green bean) registered as a traditional vegetable of Mamurogawa Town. It features a smooth texture and gentle sweetness.
We make roasted soybean flour from the 'Aokuro' soybean, which is registered as a traditional vegetable of Mamurogawa Town, on the day of production. We wrap sweet red bean paste from Kazahana in rice cakes and generously sprinkle kinako on top.
This is a 'bean-like' rice cake wrapped in mochi, made by grinding edamame that has been blanched and vacuum frozen on the day of harvest into zunda paste, and then sprinkled with kinako. It is a dish that allows you to enjoy the rich aroma and gentle umami and sweetness of zunda. (The bright young bamboo color kinako is made by roasting the 'Aokuro Soybean', a traditional vegetable from Mamurogawa Town, on the same day.)
