This dashi is based on genuine bonito from Satsuma Makurazaki, blended in a balanced way with skipjack tuna from Tosa Shimizu, and mackerel and sardine flakes from Ushibuka, Kumamoto Prefecture. We added genuine kelp from Donan and made a white dashi using only natural ingredients, taking health into consideration and enhancing the umami of each oden ingredient.
