Oysters are carefully selected from harvesting areas considering topography and weather until they reach the customer. Oysters are farmed in shallow waters. The abundance of rivers and phytoplankton from the forest, along with plankton in the sea, create their deliciousness. Among various production areas, we carefully select oysters suitable for raw consumption. ▼ [Thorough inspection system] Our in-house inspection standards are stricter than the Ministry of Health, Labour and Welfare's inspection criteria. We source oysters that meet the minimum standard values set by the Ministry for general bacteria, Vibrio parahaemolyticus, and E. coli. Additionally, for norovirus, we only source oysters that are not detected as contaminated for raw consumption. ▼ [We have obtained a patent for our oyster purification system using deep seawater from Toyama Bay!] By circulating high-quality deep seawater from Toyama Bay, which is rich in minerals and has almost no chemical contamination or bacteria, around the oysters for more than two days, we clean the oysters. This purification method utilizes the oysters' ecology to expel bacteria that can cause food poisoning. ▼ [Delivered to stores via low-temperature chilled delivery] Please enjoy our carefully selected oysters. JOC Corporation has obtained a patent for the purification system of the Japan Oyster Center! (Patent No. 6240037)

HANEGAKI Recommended Oysters

HANEGAKI's recommended oysters!

Eating raw oysters may cause health issues. Please be cautious if you have previously experienced health problems after consuming raw oysters, if you are trying them for the first time, or if it has been a long time since you last had them. Additionally, we advise against consumption for the elderly, children, pregnant individuals, and those not feeling well. We also offer a variety of our signature dishes, so please consider ordering those instead. We prioritize safety and quality in our procurement every day, but in the unlikely event that you experience health issues, we cannot take responsibility for secondary infections, so please order with this understanding.
