What is noodle soup? It is a local dish made by peeling buckwheat grains, boiling them, and serving them with broth. It was brought from Kansai by the Kitamaebune ships. It has been certified as a '100-Year Food' (Traditional 100-Year Category - local cuisine that has continued since the Edo period) by the Agency for Cultural Affairs.

There are also tororo and pickles [served with hot udon]. What are barley noodles? 'Barley noodles' is a representative local dish from the Shonai region of Yamagata Prefecture, made by kneading and stretching wheat flour dough into thin strips. Compared to regular udon, they are thinner, have a firm texture, and are characterized by a smooth and slippery mouthfeel.
