Enshu Hikimabushi is made by spreading Shizuoka wasabi grated with shark skin on top of eel, and enjoying it with flavorful Shizuoka tea.
Locally sourced eel selected by the local eel wholesaler Ebisen, carefully grilled over charcoal, and served with locally produced specialty Tengu Sansho pepper.
Please enjoy the taste of rare natural eel from Hamanako. Please allow about 30 minutes for us to grill the eel over charcoal after your arrival. *This is a menu that requires full reservation by 3:00 PM the day before.
Nishi no Seki is said to be the best match for eel. It has a meltingly smooth sweetness and richness. The balance of gentle acidity is exquisite.
A crisp dry wine pairs well with eel kabayaki sauce. Please enjoy Shinshu-produced domestic wine with eel!
