Upon stepping into the restaurant, you are greeted by a high ceiling and a counter made entirely of cypress, creating a sense of openness that makes you forget the everyday. The first dish, a rice porridge with matsutake mushrooms, warms the body and heightens anticipation for the upcoming course. The chef's commitment to using only carefully selected ingredients from various regions across the country is clearly conveyed in each dish. The light and fluffy steamed white sweetfish and the combination of concentrated umami oysters with rice were particularly unforgettable in their deliciousness. Rare fish such as thick-cut grouper and fragrant bluefin tuna appeared one after another, making each piece of sushi exciting. Paired with a rich selection of sake, the six-seat counter space became even more pleasant, allowing us to enjoy a happy time until the very end.

The counter has only six seats, creating a calm space where black and white wood stand out. It was a nice touch to be able to choose my favorite chopsticks at the beginning and take them home after the meal. The focus is on aged seafood, and the swordfish and blackthroat seaperch were surprisingly rich with fat and depth of flavor. The tuna from Kitani Suisan had distinct flavors in both the lean and medium fatty cuts, pairing excellently with the rice. Among the appetizers, the grilled triggerfish and akaza shrimp left a particularly strong impression, enhancing the enjoyment of sake. As I was leaving, I received a warm farewell, allowing me to enjoy a pleasant time until the very end.
