Upon entering, there are large calligraphic writings on the walls and images of soba making that excite me. Inside the shop, a stone mill is in motion, allowing us to see the process of homemade flour, and the aroma of freshly ground flour wafts through the air. The soba has a firm texture and a pleasant mouthfeel, allowing you to enjoy its fragrance with every bite. The dipping sauce is sharp and slightly spicy, and dipping the soba just a little makes it perfect. The condiments and small side dishes are carefully prepared, further enhancing the quality of the soba. It concludes with a light soba broth, leaving a sense of satisfaction from tasting the limited soba.
