A soba restaurant with appealing thin-cut soba

Soba Dokoho Hinoki is a charming establishment known for its hand-made, thin-cut soba. The soba is freshly made after you place your order, making it a dish worth the wait. The thin and short soba stands out for its firm texture and rich aroma. The maitake and wild vegetable tempura are also perfectly crispy, offering a taste of local flavors.

It is located in a peaceful place surrounded by greenery, and the calming atmosphere is pleasant. The seating is spacious, and the signed memorabilia on display is exciting. The hand-made thin soba has a fragrant aroma, and when you bite into it, it has just the right amount of elasticity and goes down smoothly. The dipping sauce has a refreshing umami that really brings out the goodness of the soba. The tempura of maitake mushrooms, among others, has a light and crispy batter and is very delicious. The focus is on cold soba, and you can even enjoy the soba broth, making it a satisfying bowl.
