In the tatami-matted dining room located within the hot spring facility, the atmosphere is calm and relaxing. You are guided to the dining area at the reception, and the ordering style is done with meal tickets. It is delightful that the noodles, made solely from buckwheat flour, are freshly ground, prepared, and boiled on the spot after you place your order. The thin, slightly grayish noodles have a firm texture and slide smoothly down the throat. The dipping sauce has a sharp flavor that pairs well with these noodles. The seaweed is served separately, and pickles are also included, providing a substantial portion.
