Menu
We slowly grind buckwheat from Fukui Prefecture and Hokkaido using a stone mill. We primarily use second flour, third flour, and the outer and inner husks in a method called 'Hikigurumi'. This results in a high aroma, unique texture, and a slight hint of bitterness, allowing you to truly enjoy the authentic flavor.
We use plenty of urume bonito, mackerel bonito, and meijika bonito, preparing just enough for each day every morning. Please enjoy our fragrant dashi. [Urume Bonito] It has a deep aroma and sweetness, adding richness to the overall dashi. (Produced in Ushibuka and Hyuga) [Mackerel Bonito] We use the low-fat goma mackerel among mackerel bonitos. (Produced in Ushibuka and Yaizu) [Meijika Bonito] It has a refined richness and plays a role in tightening the overall dashi. (Produced in Hyuga and Tosa)
