'Shochu' is a term that is familiar, but the process of how it is made is surprisingly not well known. The making of shochu holds infinite possibilities in every step, from the commitment to the raw materials such as sweet potatoes and barley to the distillation equipment. In search of truly delicious 'the best bottle,' the craftsmen face the art of shochu making every day.
We are committed to traditional techniques and hand-made koji. Kodama Brewing is a historic brewery that was founded during the Edo period under the original name Fujiyaya. It produced Imo shochu named Fujiyu, inspired by Izu, the birthplace of the former lord of the Obi domain, the Ito family. Over time, during the Heisei era, the brewery was in a state of suspension for a while. I studied brewing at the Tokyo University of Agriculture, just like my father, the current representative, Kazumaru Kazuo. After graduating, I returned to the sake brewery in Miyazaki, Saitama, and trained at two shochu breweries. In 2001, my family moved to Nichinan, and I inherited Kodama Brewing. With the dawn of the 21st century, new shochu production began once again. With the continuation of the history of the two breweries in our hearts, we are all working together to deliver Japanese culture and the national liquor, shochu, to everyone, embodying the theme of our brewery: 'One Path to Brew.'
A handmade shochu brewed using Miyazaki Beni, themed around 'delicacy', 'harmony', and 'aftertaste'. It features the light aroma and sweetness characteristic of red sweet potatoes.

Temperature control is very important during the fermentation process. To reduce the risk of spoilage, we usually manage it while cooling with machines. It may only be in a small vessel, but it is possible to create an environment of December in Miyazaki even in August, or of Hokkaido. However, even if we use ingredients we have grown ourselves, and even if we use local yeast, will the sake born from twisting the climate of that land become a sake that can only be made in that land? Isn’t it possible to reproduce it even if the location changes, as long as the skills of the maker and the equipment are there? Although still incomplete, we brothers are opening the windows to let in the wind, going back and forth in the fields, getting dirty in the soil, and hosting various microorganisms in the mash to create shochu that can only be brewed here, by us. We are committed to making naturally fermented shochu brewed with the local climate.

A classic that has been carefully aged for over 3 years using regular pressure distillation of barley shochu. This bottle harmonizes the distinctive roasted aroma of barley with a mellow flavor developed through aging. Recommended for those who find 'light barley' unsatisfactory.
Handmade ancient flavor. Since its establishment, it has been the only brewery in the prefecture built with a traditional earthen storehouse, using koji mold and koji lids, supported by a long history, and stubbornly maintaining handmade methods that live in harmony with the local environment and culture. The mash is fermented in large clay pots, carefully selecting ingredients that have fully absorbed the strong sun of Nikkō, and with a combination of family techniques and new technologies, each batch is distilled with great care, producing the true ancient flavor. Known as the flagship shochu of Furusawa Brewery, 'Yaezakura Handmade' offers a well-balanced flavor that has a solid umami while also feeling somewhat soft.
Founded in Showa 3 (1928) in Kushima City, located at the southernmost tip of Miyazaki Prefecture, on the border with Kagoshima. The flavors passed down from parent to child continue to evolve steadily without showing off. Incorporating change within the unchanging, making the usual taste even better. We want to deliver authenticity to everyone's daily evening drinks. We face this with all our strength, and that is the brewery's sentiment.
Using carefully selected fresh golden senkan, it is finished as a shochu with a deep and rich flavor and aroma of sweet potato, with a thick and smooth mouthfeel. It is a 20-degree shochu unique to Miyazaki.
Shochu Hitomune Co., Ltd. Kuroki Honten. Since the first drop dripped from the distillation kettle in the 18th year of the Meiji era, Kuroki Honten has been dedicated to the path of shochu making. If we were to express Kuroki Honten's feelings about shochu making in one word, it would be 'Shochu Hitomune.' This encompasses not only the continuous production of shochu but also the intention to protect and inherit the traditional culture rooted in the land that is shochu. That is why Kuroki Honten starts with agriculture for shochu making. They till the land, sow seeds, and carry out everything from cultivation to harvest by their own hands. Furthermore, the waste generated during the manufacturing process is effectively utilized as organic fertilizer, returning the blessings of nature back to nature. This is Kuroki Honten's approach to shochu making. It is a method that takes time and effort. However, there is an ideal shochu that can only be created in this way.

In Hinata City, Inoue Sake Brewery is located in Nangō, marked by a large jar. The brewery's grounds are overflowing with rich water, which has been designated as one of Miyazaki's 21 famous waters. The shochu made using this famous water employs vacuum distillation, a method that has become commonplace today. In 1983, when management became difficult, they developed their own vacuum distillation technology and succeeded in producing Japan's first 100% vacuum-distilled sweet potato shochu, saving the company. 'Culture is only culture if it is preserved. If management is not done properly, even wonderful culture cannot be preserved. I do a lot of unusual things, so at that time, vacuum distillation was certainly seen as eccentric,' said the president, Tokuo Terada, who spoke with a nostalgic smile while narrowing his eyes.

Kurokirishima is a genuine sweet potato shochu made from the sweet potatoes 'Kogane Sengan' grown in the Shirasu plateau of Kyushu and the pure underground water 'Kirishima Rekkasu' from the Kirishima mountain range. It was first released in 1916 by the founder of Kirishima Shuzo, Yoshisuke Enatsu, and recreates the flavor of black koji shochu. It features a rich sweetness from the black koji and a crisp finish.
