Our udon, made fresh every morning, is known for its firm yet chewy texture and smooth, slippery mouthfeel. The meat broth is made with dashi and kaeshi, and every ingredient—right down to the toppings—is carefully selected by Kawagoe-ya. Among the tempura items, the “charred shimeji mushrooms” are a unique Kawagoe-ya specialty that can only be enjoyed here.
