There is sake made with Hidahomare, and the aroma is pleasant. The cloudy, unfiltered Junmai Ginjo is fresh and has a light aftertaste. There is also sweet sake, which can be enjoyed either diluted with water or on its own. Chilled sweet sake is particularly delicious, and the slight texture of the rice grains adds to its appeal. A classic Junmai sake is also available, which has a clean taste that lifts the spirits. I was satisfied to encounter a bottle that conveys the charm of the region's soft water.
