We carefully prepare live eels one by one in the restaurant, steaming them and then grilling them over charcoal. Shirayaki can be enjoyed with your choice of salt or soy sauce. It is also delicious when eaten with wasabi. This tenderness can only be experienced with live eels. You may find yourself wanting to order more sake. Of course, we can also prepare Kabayaki, so please let us know.
