You can enjoy your meal slowly while watching the cooking process at the counter. A series of meat dishes showcasing the skills of Japanese cuisine are served, each with impressive aromas and dashi. The sirloin and matsutake mushroom soup melted in my mouth the moment I took a bite, and I was enchanted by the elegant dashi. The steamed egg custard with snow crab and the appetizers using caviar and black truffle were luxurious, with aromas that spread gently. The seasoning with sakura shrimp and chili oil paired with the fillet was addictive and complemented the rice well. I felt happy to enjoy plenty of local seasonal ingredients in a spacious area that exudes history.
