A short walk from Hiroo Station leads to a cozy little shop with a calm counter. Once seated, you can watch the craftsman stretch and cut the noodles right in front of you, which feels like a live performance and is exciting. The freshly made noodles have a firm texture, and the aroma of wheat is distinctly noticeable, which was impressive. The clear soup, infused with medicinal spices, has depth, and adding black vinegar midway changes the flavor significantly, making it enjoyable. You can choose the thickness of the noodles and whether to include herbs according to your preference, making you want to try new combinations over and over again. The sweet tea with floating fruits and flowers served after the meal warmed my body and made me feel happy.

I was able to relax in a calm counter seat just a short walk from Hiroo Station. As soon as I placed my order, a performance began right in front of me where the noodles were kneaded and stretched, which was impressive and exciting. The handmade noodles, which you can choose the thickness of, have a firm texture and a rich wheat aroma. The medicinal soup has a gentle fragrance and is deeply flavorful, allowing me to enjoy it until the last bite. I was also happy that I could choose whether or not to include cilantro, allowing me to customize it to my liking. I was very satisfied with this bowl that felt like a traditional technique, and I wanted to recommend it to my friends.

It's a small shop with only a counter, but the moment you step in, the refreshing atmosphere is pleasant. The hand-made performance that starts right in front of you is impressive, and it makes the wait exciting. The salt-free noodles, made only with domestic wheat and sunflower oil, are chewy and have a smooth texture. The soup, slowly simmered with beef and medicinal herbs, has a deep flavor yet a light aftertaste. The tender beef and carefully stewed radish blend into the soup, making you eat with enthusiasm. By the time you finish, your body feels warm and light, leaving you with a sense of satisfaction that makes you feel like you could have another bowl.
