I was first excited by the two-layer style with seaweed sandwiched above and below the rice. The blend of large grains of 'Shinnosuke' rice from Niigata Prefecture and barley expands with a gentle sweetness and a pop as you chew. The soft-boiled egg seems to have been marinated overnight, and the flavor penetrates even to the yolk, making me smile involuntarily. The chicken thigh, which has been grilled with a miso sauce to create a charred surface, is fragrant and satisfying to eat. The side dishes, including kinpira of burdock and carrots, tempura, and white fish fry, are abundant and keep things interesting until the end. The umami of the seaweed from the Seto Inland Sea combined with the aroma of dashi soy sauce created a bento that left a lingering aftertaste even after the box was empty.
