While waiting and watching the plating at the counter, the aroma of spices alone makes me excited. A generous serving of keema curry is placed in the center of the plate, and the slightly loose roux wraps around the rice, making it visually enjoyable. After the sharp spices, the rich flavor of aged beef spreads, and the pop of mustard seeds adds a nice accent. The soft-boiled egg, the fluffy potatoes from Hokkaido, grilled shishito peppers, and the texture of carrots create a rhythm that makes it impossible to stop using the spoon. The rice is well-separated and pairs perfectly with the curry, and I finished it all in one go. Even the fragrant coffee that came out at the end was carefully prepared, leaving me feeling happy until the very last moment.
