This sushi restaurant, located within a historic ryokan in Hakone, is convenient as it can be used without staying overnight. The counter, which conveys the warmth of wood, is pleasant and allows for a calm dining experience. The flow starts with appetizers and grilled dishes before moving on to sushi. The clam with wakame sauce, firefly squid seasoned with mustard and egg yolk vinegar, and soy-marinated bonito are all very impressive. The sushi, made with red vinegar rice, is elegant, and the acidity of the young horse mackerel, the moistness of the sea bream, and the ginger pairing with cherry salmon leave a lasting impression. It pairs well with glasses of champagne and sake, allowing you to enjoy urban flavors even while traveling.
