Marori Pork Steak Minato Mirai

Selected high-quality pork that has received the highest rating for four consecutive years from ITI (International Taste Institute). The feed consists mainly of barley and wheat that are fit for human consumption, and the pigs are raised with healthy water from the melting snow of the Canadian Rocky Mountains. To thoroughly pursue meat quality, a rare skinning method is introduced, and the meat arrives at the store in an unfrozen chilled state, resulting in minimal drip and suitability for low-temperature cooking. We procure about 8,000 kg of this pork shoulder loin monthly, achieving quality and price that cannot be replicated elsewhere.

Juicy on the inside, fragrant and crispy on the outside. The thickness allows for a contrast in texture. It takes two days of preparation to achieve this. In the store, we trim excess fat and sinew, add a special seasoning liquid, vacuum seal it, let it rest for a day, and then cook it slowly at low temperatures, allowing it to rest for another day to maximize the flavor. The effort and time put in is what makes it a specialty. When serving to customers, we carefully warm the meat to the core beforehand and then sear it quickly at high temperatures. This is a pork steak that we finally arrived at after much trial and error and repeated tastings.
