Akashi sushi is traditional, but does not incorporate creative elements. In particular, boxed conger eel sushi is the mainstay of the menu, and the sea bream battera and conger eel shinko maki are ideal for a set meal for two. The sushi's vinegared rice is soft to grip and has a wonderful taste that harmonizes the flavors of the ingredients in the mouth. The fish is fresh and goes well with the sushi rice. The aka-dashi (red miso soup stock) is also well prepared and tastes delicious without detracting from the flavor of the sushi. This restaurant has been highly regarded by the Kikusui Group for many years, and is an easy way to enjoy high quality sushi.
