Soba made from Hokkaido contract field-grown buckwheat. It is made with stone-ground flour from round-cut (soba kernels with the outer husk removed) and has a well-balanced flavor and texture. It has a gentle nutty aroma, a subtle sweetness of soba that comes through at the bottom, a rich umami that wells up from the depths, and is enveloped in natural broth, spreading happiness from the bottom up. Take a small amount, lightly dip it in the broth, and elegantly slurp it up. This is the best way to enjoy the aroma and flavor of the soba. Enjoy a cup of sake with a side dish. Finish with soba. Such a sophisticated way of enjoying it is also recommended. Please enjoy the original flavor of soba.
We use carefully selected stone-ground buckwheat flour and bake each one individually to order. The dough is moist, and the edges are crispy. Inside, our original blend of cheese adds a creamy texture. A Japanese-style simmered sauce provides an extra touch of flavor. Additionally, a soft-boiled egg yolk wraps the dish in a rich and mellow taste. Served with a fresh salad and plenty of moist prosciutto, this dish is very healthy. As of autumn 2016, this hidden gem has a 100% completion rate with over 100 servings already enjoyed. While it may be a bit intimidating to order at a soba restaurant, this dish is our pride and joy.
