You can see the cooking process over the counter and can wait with peace of mind. The grilled grayling has a fragrant skin and can be enjoyed with ponzu (Japanese sauce made from ponzu citrus juice). The sashimi is free of any unpleasant taste, and the flavor stands out with a little wasabi and soy sauce. Shabu-shabu (shabu-shabu) is a delicious way to enjoy the sweetness of the fish, and the dish is delicious even when served with zosui (rice porridge). Jako-ten (fish cake) and beef stew are also perfect with beer. To finish off the meal, sip on a bowl of ramen that is light yet rich, and you will feel much more satisfied.
