The mozzarella in the caprese is elastic yet soft inside, perfectly complementing the sweet tomatoes. The seafood fritters are lightly battered and fried to a crisp, and the shrimp can be enjoyed whole and delicious. The hind leg of the Ezo deer has a rich flavor of red meat without any gamey taste, and the simple seasoning of salt and olive oil shines.
