'Fukagawa Meshi' has been cherished as a traditional meal for fishermen in Fukagawa. It is said that the original 'Fukagawa Meshi' was primarily a type of rice topped with clam miso soup. Additionally, nowadays, it has become common to cook rice and clams together as a mixed rice dish.
At Monzen Chaya, we wanted to offer 'Deep River Clam Rice', a beloved local dish, not just as a regional specialty but as a more delicious and refined dish. Utilizing the traditional Japanese cooking technique of 'Takiawase', we created 'Deep River Clam Steamed Rice' by steaming it in a 'Seiro'.
We use fresh clams every day, adding green onions and fried tofu to ensure they are fluffy and retain their flavor. They are stored in a cool, dark place to mature. The rice is cooked with high-quality kelp as a base and broth extracted from the clams used in our restaurant. We serve the rice in a steamer after receiving your order, placing the matured clams on top, and steaming them quickly in a high-temperature, high-pressure steamer. This method steams the clams in a sealed environment with high-temperature steam for a short time, preventing them from becoming tough and enhancing their rich flavor, which blends smoothly with the rice. This is the technique of combining flavors and the power of steaming. Our unique 'Fukagawa Clam Steamed Rice' can only be tasted at Monzen Chaya, distinct from mixed rice or rice bowls, and has been loved by everyone since our establishment. We also have 'Takeout Exclusive Fukagawa Clam Bamboo Steamed Rice' that maintains its quality even when taken home. It is wrapped in a 'bamboo steamer' container that has good ventilation. Please heat it in the microwave when you eat it. To preserve the flavor, do not store it in the refrigerator and consume it as soon as possible. Note that it is not available for sale from May to early October.
Smoke is also an element of deliciousness. Our restaurant features a round robata counter made of keyaki wood, using carefully selected ingredients such as seafood, river fish, Daisen chicken, and vegetables, offering a variety of robatayaki. Our grilling experts prepare the food right in front of the customers, creating a lively atmosphere. We also provide traditional service using large ladles for entertaining guests from abroad.
