The 'Awa Sudachi Chicken' used in this karaage is raised with fertilizers containing 'sudachi fruit peel' and 'good bacteria such as natto bacteria and chitosan', resulting in chicken with minimal natural odor, resilient meat texture, rich flavor, and a refreshing aftertaste. Among the chicken parts, the 'breast meat' is used for frying as it offers the best umami and satisfying texture. The key to the karaage's flavor lies in the special marinade made with locally sourced yuzu juice, dashi soy sauce, and yuzu peel, which is thoroughly massaged into the chicken and marinated for 12 hours. Additionally, the karaage is coated with eggs from Tokushima Prefecture before being fried twice at low temperatures to lock in the unique juiciness.
