Authentic Hakata-style Tonkotsu Ramen

Hakata Ichizuitei Mita offers authentic Hakata-style tonkotsu ramen in Tokyo. The exquisite creamy broth has been simmering since the establishment's founding, resulting in a rich umami flavor. The appeal also lies in the variety of toppings like fresh garlic and grated ginger provided on each table, allowing diners to customize their flavors. The restaurant even boasts a signature from TAKAHIRO, further solidifying its popularity among many.

3.5

The rich pork bone broth has a smooth texture and a good froth, which was impressive. The faint aroma of pork bones stimulates the appetite. The firm, thin noodles cling well to the broth, and with every bite, the umami spreads. The soft-boiled seasoned egg topping has a melting yolk, which pairs perfectly with the broth. The thick menma seasoned with yuzu pepper and the spicy miso green onion chicken chashu were also enjoyable as snacks. The deliciousness was so irresistible that I ended up asking for an extra serving at the end.
