Nabe course of thinly sliced kujo leeks and thinly sliced duck shabu shabu in an elegant broth. *Only available in the evening. *A minimum of 2 persons is required.
Currently, we are using a variety called 'Shinano No. 1' from Toyama Prefecture to make it.
We use a traditional variety of buckwheat from the Maruoka region of Fukui Prefecture, ground coarsely and made into 100% soba. Please enjoy the aroma of the buckwheat.
A gentle flavor with broth made from bonito and light soy sauce
It looks gorgeous, but it is quite spicy. The combination of spicy daikon and the dipping sauce is outstanding!
The sourness of plum and the ocean aroma of wakame enhance the broth and soba.
Plenty of Kujō green onions with umami and sweetness!
