The homemade BRF ginger syrup is handmade at our factory in Komazawa. Enjoy one drink made with this ginger syrup and our famous all-you-can-eat ribbon fries for an hour and a half! Kiyo is the executive chef and director of the invitation-only restaurant 'Bohemian New York' located in Manhattan's NoHo. His exceptional sense of food and beauty has continuously produced numerous hit menus, earning accolades from sources such as The New York Times, Time Out, Michelin, and Zagat. The food vendor he conceived, specializing in French fries and ginger ale, is called B.R.F, designed to be sustainable and refined.
The freshly fried 'Ribbon Fries' are specially cut in a spiral shape using a dedicated potato cutter, made from the 'Mekuin' potatoes carefully grown in the land of Hokkaido. At the shop, the potatoes are cut after an order is placed, and the freshly fried fries are seasoned with flavors to your liking. A variety of flavors are available, including a refreshing sea salt & black pepper, as well as options for spiciness and sweetness. The Ribbon Fries have a unique texture and shape that are crispy yet fluffy, bringing out the original flavor of the potatoes to the fullest.
And, B.R.F Original Ginger Ale is another signature menu item of ours, alongside Ribbon Fry. After tasting ginger ales from around the world, we created B.R.F Ginger Syrup with a unique recipe that balances spiciness and umami at a high level. This syrup, blended with fresh ginger from Kumamoto and several types of spices, is mixed with highly carbonated soda to create B.R.F Original Ginger Ale. Those who drink it for the first time will surely be surprised by its unprecedented punchy deliciousness.
Of course, the commitment to ribbon fries and ginger ale is poured into other menu items without compromise. At B.R.F's flagship shop (Tokyo, Komazawa), we offer a menu that embodies the simple yet impactful essence of Brooklyn, featuring our proud NY burgers, bagel sandwiches, special salads, appetizers, and more, all perfectly matched with ribbon fries. For alcohol, we have a carefully selected range of craft beers from Japan and the U.S., a wide variety of bourbon whiskeys, original cocktails, and soft drinks, including ginger tea and ginger milk made with B.R.F ginger syrup. We aimed to create a place where you can enjoy a hearty lunch or dinner and relax with friends over drinks until night.

Everything is done by hand. We, B.R.F, have finally established our long-desired in-house production line at the timing of building this flagship shop, driven by our desire as craftsmen to sell products made with our own hands. This has become a very important step in embodying our craftsmanship at B.R.F. Additionally, this factory, where the manufacturing process can be seen through glass, is intentionally made visible so that customers visiting the shop can confidently pick up our products. B.R.F Ginger Syrup is packaged and shipped one by one from this factory with our pride.
In order to convey the products of companions resonating around craftsmanship to many people, we have a grocery section. Starting with vegetables from contracted farmers that are used in our store's menu every day, we introduce items such as peanut butter, herbal tea, granola, coffee beans, and naturally farmed brown rice in a way that allows you to see the faces of the producers. Their curiosity and commitment are passionate down to the details. We approach this passion with the premise of 'introducing' rather than 'selling' to our customers. In the future, we hope that B.R.F will become a platform that directly connects producers and consumers with the themes of local production for local consumption and fair trade.
Designed by SACHIKO KAMIYA, an interior designer who is also Kiyo's partner, in their atelier in Brooklyn where they live. All vintage furniture and items were collected mainly from Brooklyn and the East Coast of the United States and transported to Japan. In particular, the interior design of the flagship shop took about a year from concept creation to completion. The biggest feature is that the four areas consisting of the kitchen, factory, dining, and grocery are designed to be borderless, allowing customers and staff to move freely between them. This reflects our attitude at B.R.F, expressing our desire to create an environment where we can enjoy together while feeling as close as possible to our customers. The interior design of the mobile kitchen in Omotesando follows the same concept, with the exterior covered entirely in white tiles to express the image of the kitchen extending outside.
The people living there stimulate each other with free thinking. Designers, photographers, painters, sculptors, chefs, bakers, farmers, baristas, and all other professions can be said to be craftsmen and at the same time artists. We at B.R.F believe that there is no longer a barrier between artists and craftsmen. B.R.F aims to mature not only as a place focused on 'food' but also as a platform for various genres of culture such as art, music, fashion, and interior design. The various outputs, such as photographic works and installations created by our friends connected with B.R.F, filled with playful originality, will surely give rise to a new era of craftsmanship.
