A standard product of Ippaku Suisei that fully utilizes the flavor of Akita rice, made with special junmai sake. The sake rice is sourced from the local 'Gojome Town Sake Rice Research Association' which cultivates Akita's sake-brewing suitable rice. It has a beautiful sweetness and umami that spreads, with a moderate acidity and a refreshing aftertaste. This is a famous sake from Akita Prefecture that takes advantage of the quality of its water.
This is a junmai sake brewed with 60% polished Gin-gin rice from Iwate Prefecture. It has a fragrance reminiscent of white peach, complemented by a refreshing fruit aroma and acidity that feels like grapefruit, creating a well-balanced finish. The taste is transparent, and the sharp aftertaste shines during meals.
Using pure rice from Kurume, Fukuoka Prefecture, 'Yume Tsukushi'. It has a soft umami flavor and a crisp finish, making it suitable for a dry junmai sake. Its charm lies in how easily it can be enjoyed. This hiyadori pairs exceptionally well with dishes that highlight dashi.
Daiginjo with a fresh and beautiful ginjo aroma from Niigata, Kamo Nishiki Nagazake leaves a pleasant acidity and impressive aftertaste. By using the rare sake rice 'Aiyama', it offers an elegant and delicate flavor, resulting in a clearer finish.
