Our spin on a wintertime Nordic Spiced-Beer, this bright, copper colored saison features aromas of bergamot, lemon, mint, orange and clove, with initial flavors of spicy pink peppercorns followed by bitter lemon that's rounded out by a sweet orange character. The Julbock, or yule goat, is a common figure in modern Scandinavian countries. Its earliest manifestations are rooted in the worship of Thor, whose chariot was drawn across the sky by a pair of goats, while today, small Julbock made of straw are a staple household Christmas Decoration, good luck charm, and a Santa-like figure bearing gifts and good cheer–God Jul!
Brewed in the traditional German fashion by naturally introducing lactobacillus via adding raw grain to the mash, a "Florida Weisse" is a decidedly fruity spin on the traditional Berliner Weisse-style ale. This delicious brew is a lovely light-pink hue and positively bursting with citrus-laden flavors as moderately sour, acidic lemon notes meld wonderfully with a tart toothful of smooth, tropical passionfruit. At a modest 3.7% alcohol by volume, this light, crisp and crushable brew delivers refreshment in spades. What happened to the last gardener charged with its care? Best leave it...unsolved
Therianthropy—the mythological ability of humans to metamorphose into animals by means of shapeshifting (and vice versa) —is the next installment in our American Wild Ale series. Therianthropy is a Scottish-style ale brewed with Golden Promise malt and soured in oak barrels. When we removed La Couronne Sauvage—our first foray into the world of mixed culture beer—from barrels after six months of aging, our brewers were curious to see how the souring bacteria would assert itself in a small batch of Scottish Ale (the base beer for our Lavender Ale that was yet to be dosed). After being inoculated in the selfsame barrels and aged for several months, our mixed culture imparted tart, fruity flavors evocative of dried stone fruit that wonderfully complement its smooth, sweet malt base, building a flavor profile not unlike a Flanders Red Ale. Throughout its phases and fluctuations, this beer is the finished product of an experiment gone wonderfully right. Packaged July 12th, 2019 in 750ml corked capped bottles
Cladogenesis—evolutionary change by the branching off of new species from common ancestral types—is a collaboration with Inoculum Ale Works. We brewed 15bbl of simple Saison wort (unfermented beer) with 100% Pilsen malt and transferred half of it into Inoculum's stainless tote, which they drove back to their brewery. We each fermented our respective half-batches in stainless and oak, pitching the same Saison yeast but inoculating with our own distinct mixed cultures to highlight and compare the effects of our disparate bacteria cultures. This is our stainless-fermented batch; it's bursting with ripe green apple aromas and a slight Brett character, with crisp, tart apple lemon flavors, subtle undercurrents of earthy funk and a fairly dry white pepper finish from the Saison yeast. Mild sweetness from toasted coconut balances out the heat from the chilies, and notes of lemongrass linger on the finish
6.9 ALC/VOL, 23 IBU. This is a specialty collaboration brew with coffee-company Buddy Brew out of Tampa. The Ethiopian Harrar bean is harvested from the region where coffee was first discovered. This specific bean imparts diverse flavors depending on the year harvested and region in which it is grown. The temperature in which these beans were roasted helps to bring out a unique blueberry flavor to the bean. No actual blueberries were used, all flavors were derived from the beans. It is cloudy golden in appearance, with fluffy white head. Enticing spicy phenolic aromas from the Belgian yeast strain are prominent. Up front blueberry flavors are noticeable on the first taste, with earthy coffee flavors building with each sip. Spicy flavors from the yeast strain carry throughout flavor profile with a dry finish

This brew features a cloudy golden color with a moderate pink haze. Subtle berry aromas are noticeable, while soft wheat flavors blend with slight strawberry sweetness and moderate lactic tartness. Hearth Harvest boasts a hefty rye character with aromatic chocolate caramel flavors alongside a delicate, fruity complexity on the nose. With undercurrents of strawberry jam courtesy of Natural Process Ethiopian Yirgacheffe coffee, this seasonal ale is smooth, balanced slightly-sweet with a robust rye malt backbone and reddish bronze hue. La Couronne Sauvage ("The Wild Crown") was inspired by centuries-old Belgian lambic brewing traditions. Aged in oak barrels for six months, a mixed culture of yeast souring bacteria infuses this straw-gold American Wild Ale with a lactic acidity that finishes clean, while nuanced aromas flavors reminiscent of tart nectarine, tangerine and pear weave serpentine through subtle undercurrents of funk. Eynhallow was barrel aged for 22 months in Siesta Key rum barrels imparting sherry like qualities, with vanilla and baking spices and an incredible cinnamon note rounded out with a manzanilla tea flavor. Intense black malt and bitter dark cacao flavors are balanced by notes of ripe blackberries, strawberries, cantaloupe, baking spices and vanilla. While aging in Siesta Key Spiced Rum Barrels, we dosed this bruiser with a fiery blend of five of the freshest, hottest chili pepper we could fine, lending a pleasant, throat-tingling heat that lingers throughout the finish
7.3 ALC/VOL, 35 IBU. This pale ale is slightly hazy with a pale golden color. Aromas of fresh cut herbs with citrus undertones, similar to that of a lemon rind, tantalize your senses. The pleasant mouth feel and light body make this refreshing brew go down easy. Flavors of the leafy green Lemon Verbena (vervain) come from using the aromatic herb in the fermentation process. This brew strikes an even balance of malty sweetness with light herbal and citrus bitterness
