A signature dish of IRORI, featuring pork wrapped generously with herbs and slowly grilled over charcoal. The surface is fragrant, while the inside is surprisingly juicy. With every bite, the richness of the meat and the lingering taste of the herbs naturally call for wine.
Tender texture, rich sauce
The tomatoes are subtle, the star is the fat. The flesh that falls apart in the steam and the soup that absorbs the umami are complete. Finally, enjoy it with the finishing pasta.
Homemade Bolognese made by carefully sautéing aromatic vegetables and ground meat, simmered slowly over time. It clings well to the wide tagliatelle, allowing the rich flavor and depth of the meat to spread with every bite. Although it may not be flashy, it is a classic pasta from IRORI that you will want to eat again and again.
