This crisp, slightly dry and subtly malty brew has the delicate fruity aroma of an ale with the clean finish of a lager. Using German Noble Hops for bitterness and flavor, our definitive golden ale is fermented warm, then cold-conditioned like a lager. It uses a centuries-old yeast strain that was initially acquired after founder Tom Schlafly married his wife, who is a native of Köln, Germany—where all of the European Union's Kölsch is brewed. Proud winner of the Gold Medal for Best German-Style Kölsch at the World Beer Cup. Food Pairings: Entree: Steamed Mussels; Cheese: Mascarpone or Herbed; Dessert: Panna Cotta with Lemon. Our easy-to-drink, flavorful Hefeweizen made its debut as one of the first four beers to be brewed at the Schlafly Tap Room. It's not a traditional German Hefeweizen with notable clove and yeast aromas, but is made with 30% American winter wheat and balanced with sweet golden malted barley and hops from Oregon that evoke a hint of spice. The cloudiness comes from the absence of filtration, giving it a smooth, full body and a prominent grain flavor that offers superb drinkability. Food Pairings: Entree: Weisswurst; Cheese: Goat or Herbed; Dessert: Strawberry Shortcake. Style Stats: ABV: 4.4%; IBU: 16; SRM: 8; Color: Light Golden; Clarity: Hazy; Body: Light; Hop Flavor: Low; Malt Flavor: Low; Bitter Flavor: Delicate, Bready. Historically revered for their restorative and nourishing characteristics, stouts have made a well-deserved comeback in the world of beer. In our early beginnings, the staff of Kaldi's Coffee would come to the Tap Room and order a shot of espresso to accompany a pint of Oatmeal Stout. It didn't take us long to realize that combination was a match made in heaven. Our Raspberry Hefeweizen distinguishes itself among others in that it's a true fruit beer—not a fruit-flavored beer—that uses real raspberry in the brewing process. Once the fruit's sugar ferments out, the aroma and flavor of raspberries remains, making this a delightfully drinkable beer that's not too sweet or tart, but refreshing and balanced with a naturally hazy pink coloring. Because it's low in alcohol and brings a smooth dose of wheatiness, it's perfect for summer. Or for any time. Clean and balanced in its amber color, sweetness and toasted malts, Oktoberfest is a classic crowd-pleaser authentic in its execution and evocative of its heritage. This traditional Märzen ("March" in German) originated in 16th-century Bavaria, where it was one of the last beers to be brewed for the season before being lagered in stone caves or cellars during the summer. Given months to ferment, it was then ready for consumption at the Bavarians' fall celebration— "Oktoberfest." Food Pairings: Entree: Bratwurst; Cheese: Jalapeno Jack; Dessert: Spice Cake. The idea for Tasmanian IPA was born when we discovered the Galaxy hop on a trip to Australia in search of next big hop. We knew its distinct fruity characteristics would lead to an intense IPA with an over the top flavor. This aromatic ale is heavy on those Australian Galaxy hops and balanced in bitterness, with recognizable fruit notes of pineapple and tropical fruits. Food Pairings: Entree: Poke Bowl; Cheese: Manchego; Dessert: Pavlova. We blend malt, wheat, and oats with pounds of Idaho 7, Strata, and Sabro hops for a beer that results in a winter white out you can pour in a glass. Lagers are usually bright and clear with a clean maltiness and slight hoppiness, yet our White Lager takes the focus away from those qualities by retaining its yeast and emphasizing the hazy hue, hint of orange zest, and even, silky finish. This rare style dates back to the Middle Ages, when beer was matured in deep vaults ("lagered") for months before emerging smooth and rich in vitamins. It remained unfiltered from keg to cup, and so does ours, bringing to life a German tradition with a twist. Food Pairings: Entree: Salmon; Cheese: Mild White Cheddar; Dessert: Lemon Shortbread. Style Stats: ABV: 5.5%; IBU: 20; SRM: 5; Color: Light Golden; Clarity: Hazy; Body: Light; Hop Flavor: Medium; Malt Flavor: Mild; Bitter Flavor: Low. To make a lager (from the German, meaning "to store"), we use a yeast that ferments the beer more slowly and at a lower temperature. It is then stored for several weeks, resulting in a beer that is exceptionally smooth. "Helles" translates from the German word for "light" (a quality reminiscent of European lagers), and our combination of malts, barley, and hops—specifically the German Noble Mittelfrüh hop—creates a bright, golden beer that imparts fresh grain characters and a spicy, lemony flavor. Food Pairings: Entree: Grilled Chicken; Cheese: Monterey Jack or Brick; Dessert: Lemon Custard Tart. The cloudiness comes from the absence of filtration, giving it a smooth, full body and a prominent grain flavor that offers superb drinkability. Lagers are usually bright and clear with a clean maltiness and slight hoppiness, yet our White Lager takes the focus away from those qualities by retaining its yeast and emphasizing the hazy hue, hint of orange zest, and even, silky finish.
