We focus on local production for local consumption, passing on seasonal vegetables from producers, and we hope you can fully enjoy the feelings entrusted to us through our dishes. We aim for simple expressions that allow you to enjoy new discoveries. The vegetables at the tea room are organic. Our base soup does not contain any animal products, chemical seasonings, or preservatives. *Depending on the toppings and soup contents, some may be used. Aichi Prefecture has '21 traditional vegetables with 37 varieties.' Our establishment is certified as a place where you can eat Aichi's traditional vegetables! 'Four Definitions of Aichi's Traditional Vegetables' *Those cultivated around the 30th year of the Showa era *Those named after places or people, originating from Aichi Prefecture *Those that still have seeds or seedlings available *Those for which seeds or products can be obtained. There may be times when they are not used depending on the season. The owner is also a member of the traditional vegetable preservation association. The Mikawa region is rich in quality brewing, and we carefully select miso, oil, soy sauce, white tamari, and mirin.
