This is a homemade dried overnight set meal using high-quality mackerel caught off the coast of Jeju Island (west of Tsushima). Mackerel caught off the coast of Jeju Island from autumn to winter is known for its good fat content, high quality, and delicious taste. However, in recent years, due to overfishing and environmental changes, the catch has become very scarce, and it is now called the 'phantom mackerel.'
This is a fry of white trevally (matoudai) landed at the Sasebo Fish Market. Matoudai, also known as the target sea bream, is a high-class fish used in Western cuisine such as French cuisine, as it has a large spot on its body that resembles a target and a face that looks like a horse. Enjoy a different deliciousness from horse mackerel fry with a crispy outside and a fluffy texture inside.
