This menu features beef tongue that has been treated and aged to concentrate its umami flavor. You can enjoy the straight taste of the beef tongue's umami and texture.
A dish where beef tongue is simmered with plenty of vegetables until it becomes tender. It is so soft that you can tear it with a spoon, and you can enjoy it with plenty of green onions and wasabi. The soup is packed with the flavor of the tongue, starting off light with the first bite but developing a deep umami as you eat more.
We cut the most marbled part of the beef tongue, which can only be taken from just two pieces of beef tongue, thickly and skewer it luxuriously. It is a masterpiece where you can feel the umami of straight beef tongue.
We cook the delicious beef tongue until tender, skewer it, and coat it with sauce. This skewer has both a firm texture and a melt-in-your-mouth tenderness, making it a unique feature that we hope you will enjoy.
