There are many dishes made with local ingredients, and you can enjoy plenty of yuba. The somen topped with fresh yuba has a smooth texture that goes down easily, and I really liked it. The clear soup with maitake mushrooms has a distinct umami flavor from the broth and is delicious. The simmered yuba has a gentle richness and a comforting taste. The crispy tempura, especially the maitake and eggplant, is particularly good and has a fun texture. The small dishes like sesame-dressed vegetables and tsukudani are well-balanced, and I enjoyed combining them in various ways.
