Oishi Sake Brewery / Established in the 32nd year of the Meiji era in Akune City, the famous sake 'Tsurumi'. The sweet potato is locally grown 'Shiroyutaka', and the water is sourced from local well water. The fifth generation, a former engineer, is dedicated to this craft as a Boku, creating flavors born from 100 years of tradition. You can feel the strength of sweet potato shochu.
Shiraishi Sake Brewery / Founded in Meiji 27 in Minato Town, Ichiki Kushikino City. Unlike the mass production common in Kagoshima, where many shochu distilleries are located, it is rare to use traditional three stone jars for both primary and secondary fermentation, and distillation is done slowly with a small distillation apparatus. The koji rice is mainly sourced from local Ichiki Town, using contract-grown local sweet potatoes. The production volume is very low, making it a hidden gem loved by the locals. 'Tengu Sakura' is the top brand recommended by Shiraishi Sake Brewery.
Nishi Brewery / Hikari City, Kagoshima Prefecture. The name originates from 'Hozan Kenkyo', a biwa priest from the Kamakura period who engaged in various activities for the happiness of the people. The brewery is dedicated to making shochu with a strong focus on sweet potatoes and rice, to the extent that it is said to be agriculture. 'Tominobozan' is made with yellow koji. It has a refreshing citrus aroma, is easy to drink, and has a deep umami flavor.
