In the Koji area of Nagaoka City, Niigata Prefecture, where the rich nature of fireflies still remains, is the brewery 'Asahi Shuzo'. The sake, Katsubo, is brewed from the sake rice 'Gohyakumangoku', cultivated with natural spring water and the thoughts of various people in the untouched nature of the terraced fields of Katsubo Koichi.
Limited release in July. In Katsubo Koichi, Nagaoka City, Niigata Prefecture, there are rich natural terraced rice fields, where meltwater from the snow and spring water from underground flow, creating a traditional satoyama landscape where fireflies dance in early summer. Using the sake rice 'Gohyakumangoku' grown in this rich natural environment, we deliver a fresh and flavorful sake as a Junmai Ginjo in its unpasteurized form. Our staff also participates in rice planting and grass cutting, supporting Asahi Shuzo's active efforts in protecting the local natural environment, and this sake is exclusively sold as a limited edition product that nurtures the terraced rice fields.
