The thinly cut soba has a great texture and pairs well with the crisp broth. It has an authentic Edo-style flavor, and the slurping sensation is very pleasant. The tempura served with the zaru soba is fragrant, and the added matcha powder enhances the flavor. The herring is carefully cooked, has no fishy smell, and the flesh is moist and holds together well.
