This dish incorporates locally sourced winter vegetables, fermented seasonings, and fermented ingredients into a well-balanced Dan Dan noodle soup, generously using sweet shrimp from Itoigawa, combined with sake lees. It warms you from the core during the snowy winters famous in Niigata. Available from early December to late February.

Specially made by Ryoma-ken, this is a summer limited cold mixed noodle dish. The chewy homemade noodles are coated with a sweet soy sauce flavored with chicken oil, chili oil, and garlic, and finished with a hot spring egg and Sichuan pepper for an extra spicy and rich flavor. Available from early May to early September.

This is a flavored replacement noodle. You can enjoy the umami of the noodles by eating it as is, well mixed with niboshi oil and sauce, or you can dip it into the remaining soup or add it in, in your preferred style.
Low water content, thin straight noodles that are chewy and have a unique texture. They are designed to be less stretchy. Please use them at home for ramen, chilled Chinese noodles, mixed noodles, or yakisoba. Additionally, if you take them out with mapo tofu, you can enjoy mapo noodles at home.
