Finely crafted blonde ale that's dear to our hearts. From the field to the glass jumping off the deep end with a strawberry to keep you afloat. Style; Who cares. Hops; yep. Strawberry; it's the real deal and none of that artificial stuff
Brewed using German Pils, toasted and roasted malts, Mittlefrü and Tradition hops and a special Bavarian yeast. Aromas of dark toasted bread a hint of spice and a faintly chewy finish
We start with a traditional German Hefeweizen recipe, using 50% wheat malt and 50% Pilsner malt. Without being too irreverent to the original style, we add our own creative spin, with a sizeable whirlpool hop addition and the use of a Bavarian yeast strain, which contributes the classic Hefeweizen banana character, but with a restrained spicy phenolic character, keeping the beer approachable while maintaining the complexity of a well-crafted wheat beer

As years passed and our oak aged beer became more robust, we discovered many unique, interesting, single barrels deserving of a special release. Barn Owl was created as a response to these lone wolves, and has grown into a diverse, ongoing series that reflects the growing diversity of our barrel program. The name is a nod to the wise and exacting animal that keeps watch over the farmhouse (er..industrial warehouse), and the one-off creations are released sporadically throughout the year, just as soon as we deem the barrels ripe for the picking
A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness. The lambic that goes into it is brewed only with 60% barley malt, 40% unmalted wheat, aged hops, and water, spontaneously fermented by wild yeasts, and matured in oak casks. 3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. Lambic and Geuze are living, cultural heritage rooted in the Zenne valley! Taste, savour, enjoy and experience this bottle fermented, unfiltered, unpasteurised and unadulterated beer with friends new and old!
Our new blended series came about so we can showcase how we take ingredients and techniques normally used to create other products such as wine and cider and apply those to our beers. First in the series is a beer/wine hybrid using Cab Sauv grapes from the Western slope of Colorado. We conducted a punch down on the grapes twice a day for two weeks and then let the beer rest on them for 6 months. We then removed the beer off the grapes and blended it once more with 25% of our golden sour base to create the final product

No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. Lambic and Geuze are living, cultural heritage rooted in the Zenne valley! Our new blended series came about so we can showcase how we take ingredients and techniques normally used to create other products such as wine and cider and apply those to our beers. First in the series is a beer/wine hybrid using Cab Sauv grapes from the Western slope of Colorado. We conducted a punch down on the grapes twice a day for two weeks and then let the beer rest on them for 6 months. We then removed the beer off the grapes and blended it once more with 25% of our golden sour base to create the final product

We start with a traditional German Hefeweizen recipe, using 50% wheat malt and 50% Pilsner malt. Without being too irreverent to the original style, we add our own creative spin, with a sizeable whirlpool hop addition and the use of a Bavarian yeast strain, which contributes the classic Hefeweizen banana character, but with a restrained spicy phenolic character, keeping the beer approachable while maintaining the complexity of a well-crafted wheat beer

As years passed and our oak aged beer became more robust, we discovered many unique, interesting, single barrels deserving of a special release. Barn Owl was created as a response to these lone wolves, and has grown into a diverse, ongoing series that reflects the growing diversity of our barrel program. The name is a nod to the wise and exacting animal that keeps watch over the farmhouse (er..industrial warehouse), and the one-off creations are released sporadically throughout the year, just as soon as we deem the barrels ripe for the picking
A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness.
