Kagawa / Junmai Kagawa's dry brand 'Ayakiku'. This limited distribution sake is 'Suki no Sato'. Suki refers to a rice-producing area dedicated to the Emperor. Upon tasting, a subtle fruitiness and beautiful umami spread, followed by a slight acidity and a sharp, extra dry finish.
Hyogo / In Nada, where many large breweries produce special junmai sake, this is a very small brewery with an annual production of about 400 koku (approximately 40,000 bottles). Despite its small size, it produces sake with a good flavor. It features a slight sweetness and sharp acidity, making it a somewhat light and dry junmai sake. It has a smooth taste when served warm.
Yamagata / A dry sake made from Yamagata sake rice, Junmai Dewasato and Dewakirari. Fresh rice flavor bottled immediately after pressing. A crisp and dry junmai sake.
Brewed near Katsuura Bay in Chiba, this refreshing, dry, slightly cloudy sake evokes a brisk sea breeze. The design is inspired by the surface of the water (Minamo). It has a light and crisp mouthfeel with a sharp acidity that enhances its flavor. There is a slight effervescence, leading to a tightly-knit dry finish.
Based on the idea that the true flavor of Junmai Ginjo sake lies in its sweetness and acidity, the brand 'Kizan' has been producing this flavorful sake for about 20 years. It features a gorgeous ginjo aroma, refreshing sweetness, and acidity. Bag pressing ensures a clean taste without any off-flavors, resulting in a fresh and transparent deliciousness.
A sake brewery in Yamanashi, led by a new president in his 30s, is actively working on the development of new awa sake. It features a refreshing aroma reminiscent of green apples, the umami of rice, and a crisp aftertaste. It pairs well with dishes made from fresh vegetables.
