●Nanbu Bijin (Iwate, Ninohe) uses only junmai sake and ume from Kamaishi as ingredients. This umeshu has a refreshing, light, and sophisticated flavor, with sweetness derived solely from koji.
● Izumibashi Brewery (Kanagawa, Ebina) Umeshu made with the local specialty 'Juro Ume' from Odawara, Kanagawa, brewed with junmai sake. It has a moderate sweetness and a rich flavor of ume acidity.
Umeshu made with 'Shirokaga' green plums from Miyagi Prefecture, using sake brewing techniques from Shinza Brewery (Miyagi, Osaki). It has a mellow flavor with the taste of plums concentrated.
