Innovative Japanese cuisine using seasonal ingredients. While using traditional Japanese cooking techniques, we also add French techniques to create new dishes one by one. We use aged fish as our main ingredient and also use gibier as our meat.

A refreshing and sweet aroma reminiscent of pears and peaches spreads, giving an impression of juicy fruits. The brewery, which was affected by a fire in May 2024, aims for recovery by borrowing a brewery in Aichi Prefecture. Rice used: Yumeginkou, Rice polishing ratio: 60%, Alc: 14%
A blend of three types of yeast, this sake has a smart quality with the elegance characteristic of Miyama Nishiki. The refreshing acidity adds a gentle umami accent, with maturity and balance, and a distinctive sourness. Rice used: Miyama Nishiki, polishing ratio: 50%, Alc: 15%

Using the oldest sake rice from Akita, 'Kairyo Shinkou'. It has a fresh and juicy acidity with a slight gas sensation, and a hint of sweetness, followed by a subtle bitterness that adds an accent, leaving a very refreshing and complex aftertaste that finishes cleanly. Rice used: Kairyo Shinkou, Polishing ratio: 55%, Alc: 15%
Features a refreshing aroma and a deep flavor and acidity unique to traditional kimoto brewing. It has excellent aroma and a well-balanced sake quality that complements food. Rice used: Hattan, polishing ratio: 50%, Alc: 16%
A refreshing citrus ginjo aroma transforms into a clean taste with a soft umami that spreads in the mouth. Enjoy it chilled for a crisp experience, or warm for a gentle flavor. Rice used: Matsuyama Mitsui, polishing ratio: 55%, Alc: 15%
Recommended for those who are drinking sake for the first time. It is characterized by a refreshing and fragrant aroma. Quadrifoglio means 'lucky four-leaf clover' in Italian. Rice used: Gin no Sato, polishing ratio: 60%, Alc: 15%
A popular fresh sake brewed with Tamazakae rice. It features aromas reminiscent of green apple and lychee, with fresh acidity and a sharp umami and crispness derived from the rice. Rice used: Tamazakae, Rice polishing ratio: 65%, Alc: 17.8%
