It is a specialty sake unique to Okinawa, produced since the Ryukyu Kingdom era. The main ingredient is Thai rice, to which black koji mold and yeast are added, followed by fermentation and distillation. Particularly, those aged for over three years are called 'kusu' (old sake), known for their rich aroma and mellow flavor developed over time. Currently, there are 47 sake breweries in Okinawa, offering about 1,000 different brands. Why not try to find the one that suits you?
