As I enter the shop, the warmth of the traditional wood spreads around, and just looking at the signs and goods on the walls fills me with excitement. I'm delighted to start off leisurely with a chilled bottle of beer while enjoying a generous serving of nozawana (Japanese pickled greens). The kombu-marinated Shinshu salmon has a firm texture, and its light yet rich flavor spreads throughout my mouth. The moist red horse sashimi is complemented by ginger, and its umami continues to impress with every bite. Small dishes like tofu and oden are brought out at just the right time, sparking lively conversation. The finishing soba, intertwined with wild vegetables and tororo (grated yam), was the perfect bowl to wrap up the journey with its gentle aroma of the dipping sauce.
