Our sushi vinegar has been crafted over 80 years since our establishment, honed and perfected by sushi chefs, using the renowned Yokoi vinegar (Yokoi Brewing), known to all in the sushi industry.
Our restaurant thoroughly manages the temperature of the sushi rice to be at body temperature. Additionally, we ensure that the sushi rice has a slightly stickier texture than usual to pair well with the seafood bowl.
