The water drained well and covered with volcanic ash from Sakurajima, along with the warm climate, creates the ideal conditions for growing Satsuma sweet potatoes, primarily using the Kogane Senkan variety as the main ingredient. The unique rich aroma of sweet potatoes and the smooth, sweet flavor are its main characteristics, and various products are made using different types of koji and sweet potatoes.

Barley Shochu is a type of shochu that originated in Iki, Nagasaki Prefecture. It is made from malted barley, but while the mainstream barley shochu from Oita uses a combination of barley koji and barley, Iki shochu is made with a combination of rice koji and barley, resulting in various production methods. It features a unique roasted aroma of barley and has a mild sweetness. Recently, long-term aged varieties stored in barrels have also become popular.
This is a shochu that can only be produced in Amami Oshima, Kagoshima Prefecture, using brown sugar, which is a local specialty. It features a unique mellow flavor derived from brown sugar and a sweet aroma reminiscent of syrup. While it is similar to rum in that it uses brown sugar as an ingredient, brown sugar shochu achieves its distinctive taste by using rice koji.
The representative of rice shochu is 'Kuma Shochu', which is produced in the Kumamoto Prefecture's Kuma Basin, an area that has been known for shochu production alongside the Satsuma region since ancient times. It is characterized by a rich aroma and a deep flavor, but recently, varieties with fruity aromas similar to ginjo sake and refreshing flavors have also become popular.

One theory about the name is that it was named after the picture of a polar bear on the label of the condensed milk can used for the shaved ice. Another theory suggests that it was named because the appearance of the shaved ice topped with milk syrup, three-color agar, yokan, beans, and fruits resembles a polar bear when viewed from above.
