Ureshii Gyoza Bar Ribaru

What is the signature product 【Happy Gyoza】? 80% vegetables, 20% meat. It utilizes the natural sweetness of vegetables centered around cabbage, with a crunchy texture filling. Throughout the year, we use Tsumagoi cabbage for most of the period, along with chives and long green onions from Gunma Prefecture. The moisture-rich spring cabbage undergoes longer dehydration, while the dense winter cabbage is dehydrated for a shorter time. By adjusting the amount of moisture removed depending on the season, we stabilize the crunchy texture. The sweetness of the cabbage, along with the flavor of chives and long green onions. Domestic ginger and garlic are used. The aroma and umami come from powdered shiitake mushrooms, kombu powder, and dried bonito and mackerel flakes. Unlike the trendy juicy meat gyoza, 【Happy Gyoza】 values the deliciousness derived from vegetables.
